Fall Flavors Come Alive in the Teaching Kitchen at Memorial Hospital

 

Carthage, IL – Memorial Hospital’s Health and Wellness Center is excited to announce its
lineup of Fall Teaching Kitchen classes. These interactive classes will provide participants with hands-on learning, delicious recipes, and the opportunity to connect with others through food.


Upcoming Fall Classes*
* Freezer-Meal Pick Up: Order Sept. 15–26, Pick Up October 2
Stock your freezer with ready-to-go meals prepared with health and convenience in mind.
The menu includes: Chicken Burrito Bowls; Lasagna Soup; Beef Enchiladas; Chicken
Gnocchi Soup; Chicken Pot Pie (Made by Chef Amber); Italian Chopped Salad; and
Peanut Butter Bites.
* Balanced Bites for Diabetes: September 23, 10:00 AM
Designed for individuals living with diabetes or prediabetes and those who care for them.
This hands-on class will feature delicious fall-inspired recipes while exploring practical
ways to manage blood sugar through healthy lifestyle and food choices.
*Food & Flowers: October 2, 5:00 PM
Join us for a cozy evening celebrating fall! Participants will prepare delicious fall
appetizers and small bites while also having the chance to create a charming fall flower
arrangement.
* Fall Flavors for Kids: October 13, 10:00 AM
A fun, hands-on class for 2nd- 5th Graders to explore autumn flavors while building
kitchen confidence.
* Pie Making: November 18, 5:00 PM
Craving homemade pies for Thanksgiving but want to skip some of the hassle? Join us
for a hands-on pie-making class where you’ll create one delicious pie from scratch.
“Fall is a season for gathering, sharing, and enjoying good food. Our Teaching Kitchen classes capture that spirit and give our community the chance to learn, create, and celebrate the flavors of the season together,” said Ashlyn Housewright, Executive Director of Community Health and Wellness.

2nd annual Coach Rodney Blue Charitable Run on Sept. 13

2nd annual Coach Rodney Blue Charitable Run on Sept. 13

GALESBURG — The Sandburg Foundation will host the second annual Coach Rodney Blue Charitable Run at 8 a.m. Sept. 13 on the Galesburg campus to honor the late Chargers cross country coach and support his legacy for future cross country student-athletes at Sandburg.

 

Runners and walkers of all ages and skill levels are invited to register for this non-competitive event. Registration is $30 for ages 13 and over, $20 for ages 12 and under and free for current Sandburg students. On-site registration will also be available.

 

Money raised will go toward the Coach Rodney Blue Cross Country Team Fund. More than 150 runners and walkers participated in last year’s inaugural event, and the fund has raised over $12,000 to support the Sandburg cross country program and its student-athletes.

 

For those who don’t want to participate in the run/walk but would still like to support the Coach Rodney Blue Cross Country Team Fund, donations can be made through the Sandburg Foundation.

 

Opening ceremonies for this year’s run will take place at 8 a.m., and the 5K run/walk will start at 8:30 a.m. A 1K run/walk will begin at 8:35 a.m. The Sandburg Foundation will provide a light breakfast afterward.

 

Blue passed away in July 2024 at age 66 after joining the Chargers as an assistant in 2011 and leading the men’s and women’s cross country teams since 2015. Blue steered the program to its most successful stretch ever, winning five Region 4 championships and sending a team or individual to the NJCAA national meet in each of the eight seasons it fielded a squad during his tenure.

“Chad the Cougar and the Forest of Feelings” to Release on August 6, 2025

QUINCY, IL – Chaddock is proud to announce the release of its first-ever children’s book, Chad
the Cougar and the Forest of Feelings, launching August 6, 2025. Written and illustrated by
Chaddock staff, this story blends real strategies Chaddock uses with fun and engaging storytelling
to help children better understand and manage big emotions.
The book follows Chad the Cougar on a journey through the Forest of Feelings. Chad meets Baxter
Badger, who’s feeling really angry but isn’t quite sure why. With help from their wise friend Olivia
Owl, Chad helps Baxter navigate those feelings and shows young readers how to do the same.
The book is inspired by Chaddock’s Developmental Trauma and Attachment Program
(DTAP®). The strategies modeled in the story reflect real, evidence-informed practices used at
Chaddock to support children who have experienced trauma and attachment disruptions, but they’re valuable tools for any child.
The book helps children understand and name their emotions, learn strategies to manage big feelings, and practice compassion and peer support.
The project was brought to life by local author Ron Kinscherf in collaboration with Chaddock staff. 
The illustrations were hand-painted by Chaddock’s Family Coach, Sarah Goodapple.
“My biggest hope for the book is that children will see themselves in the story and that they’ll come away with new skills to help them navigate big emotions like anger,” said Sarah. “I also hope teachers and therapists will find it to be a valuable tool they can use regularly with the children they support.”
To celebrate the release of this book, Chaddock will hold a special launch event for local educators:

 When: August 6th
 Morning Session: 9am – 11:30am, with a program at 10am
Afternoon Session: 1pm – 3:30pm, with a program at 2pm
Where: Chaddock School – 205 S. 24th St. Quincy, IL

At this event, the first 100 educators who attend will receive a free copy of the book. Plus, they’ll get to hear from our staff who worked on this project and learn about additional resources Chaddock offers to support schools throughout the year.

Carthage, IL – Memorial Hospital is pleased to invite community members to participate in
community health screenings on Wednesday, August 27, at the Memorial Hospital Health &
Wellness Center Conference Room, located at 1454 N. County Road 2050, Carthage, IL 62321.
The cost is $25 per registrant. Attendees will also receive a complimentary breakfast at the
hospital’s Courtyard Café following their screening.
This event will provide valuable preventive health services, including:
? A1c Testing
? Lipid Panel
? Body Composition Analysis (Tanita Scale)
? Vision Screening
? Hearing Screening
Participants are encouraged to fast for 10–12 hours prior to testing to ensure accurate results.
Appointments are limited — only two (2) openings per session are available between 7:30 AM and 9:30 AM, so early registration is strongly encouraged.
